01 - 8 medium flour tortillas
02 - 2 cups cooked turkey, shredded or chopped
03 - 1 cup cranberry sauce, whole berry or jellied
04 - 2 cups shredded mozzarella or Monterey Jack cheese
05 - 1/2 small red onion, thinly sliced
06 - 1/4 cup fresh cilantro, chopped (optional)

# Directions:
01 - Arrange 4 tortillas on a clean work surface, then evenly distribute the turkey, cranberry sauce, cheese, red onion, and cilantro (if using) over each tortilla.
02 - Place the remaining 4 tortillas on top of the loaded tortillas to create sandwich-style quesadillas.
03 - Heat 1/2 tablespoon butter or olive oil in a large skillet over medium heat.
04 - Transfer assembled quesadillas to the skillet and cook for 2 to 3 minutes per side, or until golden brown and cheese is melted, adding more butter or oil as necessary for even browning.
